García Cubero's Paleta De Cebo De Campo 50% Ibérica comes from pigs with a 50% ibérica breed that have grazed freely in the holm oak groves of Extremadura, feeding on natural grasses and pastures. During the final fattening phase, the diet of these animals is supplemented with selected feed, resulting in a paleta of 4–4.5 kg.
After an artisanal curing process of at least 20 months in natural drying rooms, and thanks to the cold and dry climate of Monesterio, this paleta develops a unique aroma and flavour.
