From animals raised in the Dehesa Salmantina that after its sacrifice is cured to take advantage of the special climatic conditions of famous Salamanca populations producing Iberian ham.

The combination of the acorn and the natural pastures of the Dehesa and the special selection of Iberian acorn-fed hams has allowed us to obtain a 50% Iberian Bellota Ham with an exceptional flavor and aroma.

All Melquiades Rodríguez Iberian products have the quality guarantee of the CERTICAR certifier that confirms compliance with the Iberian standard and the absolute traceability of this slicing.

How is traceability achieved in slicing?

Each 50% Iberian acorn-fed ham has its numbered bridle. There is a yield associated with the cut in each Iberian ham (between 40% and 50%). The certifying body checks that the yield of the ham is logical and the producer must demonstrate the performance he declares.
In this way, the number of sliced sachets that is achieved with each acorn-fed ham is known.

Thus, each batch of sachets is always associated with one or more flanges of acorn-fed ham. There is no loss, you will always know which flanges each sliced sachet belongs to.

Founded in 1956 in Coreses (Zamora) by Melquiades Rodríguez himself when he settled in this municipality after learning the meat trade in Salamanca. Specialized in the manufacture and sale of Iberian ham and sausages of both white and Iberian pork.

The Melquiades Iberian ham is cured in the natural dryers of the company in Salamanca, preserving the tradition in the elaboration. The unique taste and unbeatable quality are the result of years of experience.

The master chacineros and jamoneros maintains the family character of the company. The 3rd generation leads the project at present maintaining the artisan elaboration of ham that provides that unique smell and flavor in its Iberian products.


The 50% Iberian Acorn-Fed Ham Sachets, cut with a knife, are obtained from pigs raised in the Dehesa Salamanca and cured in natural drying sheds in Salamanca. They are known for their exceptional taste due to feeding on acorns and natural grasses. Each ham has a numbered flange that ensures traceability and the certifying body verifies the performance, allowing us to know how many sachets are obtained from each ham, which guarantees the absolute traceability of each batch of sachets.
