A sliced jamón ibérico has a net sliced yield over its gross weight of 40%. Therefore, to make it easier for you, we give it to you already sliced. You can choose between the equivalent of a 6-6.5kg ham that would be 25 sachets or the equivalent of a 7kg ham. which are 30 envelopes.

You can choose between 25 or 30 sachets of 100g./sachet of 100% ibérico Jamón De Bellota sliced by machine plus a sachet with about 100g of jamón ibérico cubes and a bag of bones. It's exactly the same as if you bought a 100% whole ibérico jamón ibérico bellota and they sliced it at the delicatessen on the corner but at an INCREDIBLE price!

The option of 30 sachets is the equivalent of a 7.5kg ham.

The Jamón De Bellota 100% breed ibérica Pata Negra is made from pigs from the Martín Matas family's own livestock farm. The jamón ibérico Martín Matas is cured in a natural cellar in the drying sheds of Guijuelo and Ledrada.

The product tasting evokes a nutty taste and a soft sweetness characteristic of a natural diet based on the fruits of the pasture, as well as a slow and patient curing in natural drying sheds in Guijuelo.

The 100% ibérica Pata Negra breed Jamón De Bellota machine sliced is an excellent option for quick consumption by leaving the blister pack open for about 15 minutes.

IMPORTANT: The bag of bones goes into the vacuum. It is likely that with movement the bones themselves, by their very nature, tear the bag and it loses its vacuum. This does NOT alter the organoleptic characteristics of the bones at all and will NOT be a reason for change/complaint. If the bag of bones arrives without a vacuum, we recommend that you take them out of that bag and put them in a new bag for freezing, which is an excellent form of preservation.

The history of Martín Matas was born in the early twentieth century when Justo Martín and Cecilio Matas in Guijuelo and Ledrada respectively began their journey in the Iberian pig sector.

At present, in jamones ibéricos martín-matas Justo and Alberto, great-grandchildren of the founders, continue with the breeding of Iberian pigs and the artisanal production of authentic Iberian ham.

IBERIAN PIG FROM OWN LIVESTOCK

90% of the products marketed by the firm Ibéricos Martín Matas come from animals from their own livestock. Raised and fed by the Martín Matas family itself. This total control of the elaboration process guarantees not only the traceability of the product, but also the homogeneity of some hams.

100% Iberian breeding mothers are the result of careful genetic selection after many years of experience. The boars are raised in the own pastures or for rent that the family has in Extremadura and Salamanca. In towns of the Sierra de Francia such as Sotoserrano and other municipalities of Salamanca.

A differentiating feature of Martín Matas Iberian ham is the integrated production that respects animal welfare.

MORPHOLOGY AND CURING OF MARTÍN-MATAS IBERIAN HAM

The morphology of each piece of Martín Matas Iberian ham is easy to distinguish. These are stylized legs in which the physical exercise of the animal provides a firm musculature.

The curing in a natural cellar is carried out in the own dryers of Ledrada and Guijuelo, localities recognized internationally for their fame as great producers of Iberian ham.

The quality and seriousness of Jamón Martín Matas is endorsed with the recognition and adhesion to the Regulatory Council of the PDO Guijuelo. Tasting an Iberian ham Guijuelo by Martín Matas is to enjoy a unique flavor.
