The 100% Iberian sweet acorn-fed ham Protected Designation of Origin PDO Jabugo SUMUM 17 Aldeas is unique. Coming from pure Iberian pigs raised in the family pasture of La Lima where they are fed with sweet acorns.
What are sweet acorns and why do they make 17 Aldeas Iberian hamunique?
The acorn, like all fruits, has sugars in its composition. The average is usually 3.5% and the hundred-year-old holm oaks of our Dehesa have 9%, almost triple the usual. This doesn't mean that the ham is going to be sweet, no!! But the Iberian pig, as a monogastric animal, synthesizes the food it eats in its meat. In this way, an acorn with more sugar will give the ham a unique and special flavor.
Our Dehesa, located in the Sierra de Aracena Picos de Aroche Natural Park, has a very high density of holm oaks that allow a higher consumption of acorns per animal, which translates into a higher % of oleic acid, reaching up to 60%, well above the usual.
Finally, in 17 villages we are very aware of Animal Welfare and we are one of the few Iberian producers that has the Welfair Quality seal
Adding these special circumstances, we obtained a unique Iberian ham, the 17 Aldeas ham Protected Designation of Origin PDO Jabugo. Possibly the best Iberian ham in the world.
