This Pata Negra ham is the jewel in the crown of the Ingelmo family who raise all their animals in the pastures of Salamanca. Iberian pigs with a breed purity of 100% that have enjoyed a large amount of bellota in the montanera months.
A 100% ibérica Pata Negra bellota ham is characterized by less fat infiltrated from the muscle and a thin leg. On the palate the jamón de bellota pata negra brings fresh flavors of the herb and bellota.
