The ibérico origin of the animals gives the piece unctuousness and the aroma that will remind you of the best Iberian shoulders in cebo. Without being a paleta within the ibérico standard, it is an excellent option for any event.

A paleta gives a maximum yield of 30% of your weight. The 3.5-4kgs option will allow you to enjoy approximately 1kg. of paleta already sliced.

As a differentiating factor compared to similar palettes, there is its curing. It exceeds the 12 months required by the ibérico standard for pallets. The usual minimum curing time for Dionisio Sánchez's Veta Oro paleta is 14 months

Dionisio Sánchez began his activity in the 40s. Today, it is his son Dionisio who continues the tradition in Fuentesaúco, Zamora. Following the traditional process of curing hams and with its own selection of the Duroc breed, it has obtained its own genetics called Konduroc.

The Duroc pig is characterized by its rapid growth and marbled meat. It is the only pig that is allowed to cross with the Ibérica breed.

At Jamones Dionisio Sánchez, the animals' feed is taken care of with cereals only from Castilla y León. In addition to the careful feed, free of GMOs and additives, it allows a greater weight and life to the animal, thus guaranteeing a better texture and enhancing the flavor of Konduroc Ham. At Dionisio Sánchez, the requirements to obtain the Animal Welfare seal are strictly complied with.

All Dionisio Sánchez sausages and hams are covered by the Tierra de Sabor guarantee brand.

Apesar de anunciar 18 meses de cura, a paleta apresenta uma carne mole, o que indicia uma cura deficiente.
Também não tem intensidade de sabor.
