The paleta Kacha Negra is a 100% DUROC DIONISIO SÁNCHEZ paleta come from a UNIQUE genetics, developed exclusively by DIONISIO SÁNCHEZ as a result of years of research and family experience in pigs.
It is almost impossible to find 100% DUROC hams and shoulders in our supermarkets. In general you will find "Duroc crossing" but it is not 100% Duroc.
What makes KACHA NEGRA 100% Duroc so special?
The 100% DUROC pig is the only breed pig that ibérica not authorised in the R.D. 04/2014 standard for crossing with the 100% ibérico pig. This is due to the many genetic similarities it possesses with the 100% ibérico pig. Among others, the black hoof that is very common in 100% Duroc pigs and guaranteed in Black Kacha. You will NOT find this black hoof in the hams and shoulders of Duroc crosses with other white-coated pigs that are common on the shelves

What makes the 100% Duroc Black Kacha paleta unique?
Thanks to its infiltrated fat, it achieves an important sensation of unctuousness, unique aromas with soft and pleasant flavors on the palate that do not envy many of the cebo ibérico popsicles on the market.
A 100% DUROC paleta gives a maximum yield of 30% of its weight. The 3.5-4kgs option will allow you to enjoy approximately 1kg. of already sliced paleta .
As a differentiating factor compared to similar shoulders, is its curing: It exceeds the 12 months required by the ibérico standard for Iberian shoulders. The usual minimum cure for Dionisio Sanchez's Black Kacha paleta is 14 months

Dionisio Sánchez began his activity in the 40s. Today, it is his son Dionisio who continues the tradition in Fuentesaúco, Zamora. Following the traditional process of curing hams and with its own selection of the Duroc breed, it has obtained its own genetics called Konduroc.
The Duroc pig is characterized by its rapid growth and marbled meat. It is the only pig that is allowed to cross with the Ibérica breed.
At Jamones Dionisio Sánchez, the animals' feed is taken care of with cereals only from Castilla y León. In addition to the careful feed, free of GMOs and additives, it allows a greater weight and life to the animal, thus guaranteeing a better texture and enhancing the flavor of Konduroc Ham.
