The 100% bellota ham ibérica San Ingelmo. Pata Negra comes from Iberian pigs raised in the Dehesas Valdelazarza in Horcajo Medianero and the Dehesa Navalcuervo in Palacios de Salvatierra in the vicinity of the Sierra de Béjar and Candelario.
This Pata Negra ham is the jewel in the crown of the Ingelmo family who raise all their animals in the pastures of Salamanca. Iberian pigs with a breed purity of 100% that have enjoyed a large amount of bellota in the montanera months.
A 100% ibérica Pata Negra bellota ham is characterized by less fat infiltrated from the muscle and a thin leg. On the palate the jamón de bellota pata negra brings fresh flavors of the herb and bellota.
The Ingelmo family slices this ham by machine as your order arrives and sends it directly from their dryers to your home. It will be sent along with the bones of the piece to make rich broths. Finally, it includes the jamón ibérico minced meat with which you can delight your guests with great authentic bellota ham croquettes.
This pata negra ham is presented in approximately 10 or 30 sachets of 100grs. vacuum-fried. 30 sachets are equivalent in yield to a ham of about 6.5-7kgs.
