The Castaño family has spent generations dedicated to the breeding of the Iberian pig in their own pastures of the Sierra de Aracena and Picos de Aroche in Huelva, in the municipalities of Jabugo and Cumbres mayores where they cure their renowned Iberian acorn-fed ham.
A 100% Iberian shoulder of acorn weighing more than 5kgs allows to obtain a great performance to the cut to cuchilo.
