What do you recommend me to buy Iberian shoulder or ham?

This is the million-dollar question and there would be no exact answer. Here are some clues; We will talk about the weight of each piece, the yield, price, ease of cutting and juiciness. The Iberian shoulder will always be smaller in size from 4kgs - in the case of the 100% Iberian shoulder it can be below 4kgs - to the large ones that have just over 6kgs. The smallest Iberian ham is 7kgs or a little less in the case of 100% Iberian ham. The yield of an Iberian shoulder is usually 30-35% of its weight. If it's 100% Iberian, it probably has more topping bacon to avoid a very dry piece. The ham reaches up to 50% of its weight in yield when we cut hams of 9.5kgs or more. The price per kg of Iberian ham will always be higher than the price/kg of the shoulder. As for the cut, the bones and arrangement of the shoulder make it more complicated, although once you get the hang of it it is not that difficult. The palette is juicier for connoisseurs, but it's a matter of taste.
