The 100% Ibérica Coppa bellota stands out for its unique juiciness, even more so than the lomo ibérico of bellota.

With the right maturation process, it is transformed into a true gastronomic jewel of the highest quality. In fact, there is a Protected Designation of Origin for this product in Italy: The Coppa Piacentina PDO, which has a history that would date, according to sources, to Roman times.

If the Coppa italiana is considered a real delicatessen sin made from pigs of the Large White, Italian Landrace and Duroc breeds, imagine trying a Coppa made from 100% ibérico pigs fed with bellota in its montanera phase that will give it a unique flavor in addition to the high level of oleic acid, such as olive oil.

The Coppa, or mogote in the province of Salamanca, comes from the muscles of the neck, the upper part of the lomo of the pig ibérico and the one closest to the head. It has a higher amount of fat than loin or lomo for that reason it is important to consume it sliced very thinly.

This Coppa (Mogote) has gone through a natural curing process that begins with airing in oak wood and then a minimum of 150 days of curing that ensures a characteristic smell and taste.

The intense aftertaste that remains on the palate is unique and spectacular.

Description

The 100% bellota Coppa Ibérica stands out for its great juiciness, even superior to that of the bellota lomo ibérico. It comes from the neck muscles of the ibérico pig (known as mogote in Salamanca), an area with greater fat infiltration that provides an intense flavor and smooth texture, especially when consumed in very thin slices.

Made with 100% Iberian pigs fed on acorns during the montanera, it is rich in oleic acid, the same as olive oil. Its natural curing process includes airing with holm oak wood and a minimum of 150 days of maturation, which develops its aroma and its characteristic intense aftertaste.

A gourmet product ideal for appetizers or to accompany dishes such as pasta, offering a unique gastronomic experience.
