Wagyu ham comes from a beef breed of Asian origin that Wagyu breeders in Spain have crossed with native Galician cachena or Berrenda breeds to obtain or a unique animal with registered and certified trademark.
The Iberian Wagyu in Spain is raised in freedom in the Dehesa Extremeña following the same guidelines as the Iberian pig. Each animal has 2Has. of grass. In times of scarcity of grass or acorn the diet is supplemented with feed free of urea or animal fats and enriched with Extra Virgin Olive Oil.
This results in a juicy and healthy red meat rich in monounsaturated fatty acids. It is also a cured product without gluten and lactose free. Wagyu ham and sausages are Halal certified.
Cured Iberian Wagyu represents one of the greatest agri-food innovations in the Spanish gastronomic scene.
