paleta of 100% bellota Ibérica J'Monesterio, made from 100% breed pigs ibérica raised in freedom in the pastures of southern Extremadura and fed on acorns during the montanera.

Each piece has been carefully selected to offer a unique experience, where the exceptional flavour, traditional know-how and benefits of a product ibérico certified with a black seal of the Jamón Ibérico Quality Standard come together.

The paleta is slicedby the team of cutter Jesús García, Spanish Champion of cutters. Their mastery of cutting and knowledge of the ibérico product, guarantees perfect slices that enhance every nuance of aroma and flavor.

The paleta has been made following a natural curing process:

  • Between 12 and 16 months in traditional drying sheds

This gives the piece a deep and intense flavour, with the unctuous texture characteristic of the best Iberian hams.

Format and presentation:

  • SLICED TAPAS FORMAT Sliced in 14 sachets of 100 g, vacuum packed, with their corresponding cubes and bones. Estimated slicing yield: 30% - 35% of original weight.

IMPORTANT: The bag of bones goes into a vacuum and it is not all the bones in the paleta, only the most usable. It is likely that with movement the bones themselves, by their very nature, tear the bag and it loses its vacuum. This does NOT alter the organoleptic characteristics of the bones at all and will NOT be a reason for change/complaint. If the bag of bones arrives without a vacuum, we recommend that you take them out of that bag and put them in a new bag for freezing, which is an excellent form of preservation.

Depois de vencer o campeonato espanhol de cortadores de presunto, Jesús fundou sua fábrica usando gado próprio e familiar. Em 2018, a Arte Corte recebeu o prestigioso Golden Ham Award para o melhor jamón de bellota da Extremadura, além de ser reconhecida com o prêmio de melhor gado.
