The 100% sweet jamón de bellota ibérico PDO Jabugo SUMUM 17 Aldeas is unique. From pure Iberian pigs raised in the family pasture of La Lima where they are fed with sweet acorns.
What are sweet acorns and why do they make the jamón ibérico 17 Aldeas unique?
The bellota like all fruits has sugars in its composition. The average is usually 3.5% and the hundred-year-old holm oaks in our Dehesa have 9%, almost three times the usual amount. This does not mean that the ham will be sweet, no!! But the pig ibérico as a monogastric animal synthesizes the food it eats in its meat. In this way, a bellota with more sugar will give the ham a unique and special flavor.
Our Dehesa, located in the Sierra de Aracena Picos de Aroche Natural Park, has a very high density of holm oaks that allow a higher consumption of bellota per animal that translates into a higher % of oleic acid, reaching up to 60% well above normal.
Finally, in 17 villages we are very aware of Animal Welfare and we are one of the few ibérico producers that has the Welfair Quality No. 2022010001 and Pefc License No. PEFC/14-22-00004 certificates.
Adding these special circumstances, we get a unique jamón ibérico , the 17 Aldeas PDO Jabugo ham. Possibly, the best jamón ibérico in the world.
