The 50% Iberian Bellota Shoulder gives a cut yield of 30-35%. You will always have a higher performance when the palette is larger.
The paleta of bellota 50% Ibérica comes from free-range pigs in the Dehesa Salamantina, in the foothills of the Sierra de Béjar. It is characterized by its mild flavor and juicy texture, thanks to the infiltrated fat provided by the Duroc-Ibérico cross. This paleta offers a cutting yield of 30-35%, which tends to be higher the larger the paleta.
