The name of our brand, Matarrevalva, comes from the name given to a place in Ledrada, Salamanca where Celedonio Gómez and Segundo García let rest before slaughter the Iberian pigs brought from Extremadura where they had been fattened based on pastures and fruits of holm oaks and cork oaks. With this rest, it is possible to relax muscles and tension so that later the juiciness and flavor of the meats are much superior.
For 100 years this tradition of breeding the Iberian pig in Extremadura has been perfected. Today, Matarrevalva breeds and slaughters all its animals on farms near Almendralejo, Badajoz where it later cures with time and dedication this Iberian shoulder of bait field.
One of the aspects that stand out in our palette of 50% Iberian field bait and other Iberian products that we elaborate is the exquisite care for animal welfare. An own team of veterinarians regularly visits the farms and farmhouses of Extremadura where our animals graze followed by periodic controls in our facilities from the salting process to curing in a natural cellar.
