Tips for buying a good ham

Differences between Iberian ham and Serrano ham

Ham is made from the hind legs of a pig. Cured ham is a traditional product in Mediterranean culture. Spanish ham differs from others like prosciutto due to its curing process. Serrano ham and Iberian ham follow a similar curing method. After slaughter, the ham leg is trimmed and undergoes salting, resting, and curing.

The term jamón serrano comes from curing ham at high altitudes in mountain ranges, where the climate and temperature are ideal. Today, modern facilities can replicate these conditions anywhere by controlling humidity and temperature.

Pigs come in different breeds. For serrano ham, common breeds include Landrace or Large White. The Duroc breed stands out among white pigs for meat quality and internal fat marbling, hence often used in crossbreeding with Iberian pigs. There are distinct differences between white pig breeds and Iberian pigs, mainly in meat quality and purpose. Therefore, buying Iberian or serrano ham results in notable differences in taste and quality.

Within the Iberian breed, various strains exist—entrepelado, torbiscal, retinto, lampiño, manchado de Jabugo—due to genetic evolution and regional adaptation over decades. Regardless of strain, Iberian pigs always produce exquisite Iberian hams and shoulders.

White pigs are primarily used by the meat industry to produce fresh and processed pork products, including serrano ham. Conversely, Iberian pigs are dedicated to producing premium Iberian hams, shoulders, and high-quality fresh meat, superior to white-pig products.

How to buy high-quality ham at a good price?

The ham comes from the pig’s hind legs. The front legs provide the raw material for what is known as shoulders or "paletillas".

When choosing quality ham, one of the criteria to consider is the breed. The Iberian breed is exclusive and unique to the Iberian Peninsula. It is the origin of Iberian ham.

White ham, although we commonly call it Serrano ham, its correct denomination is Cured Ham. Depending on the curing time, it may be classified as bodega, reserva, or gran reserva cured ham. The term Serrano ham can only be applied to those white hams that meet the requirements set out in the PGI (Protected Geographical Indication) specifications for Serrano Ham.

In addition to breed, an important factor to consider is the feeding. Intensive farming with feed-based diets is the standard for white pigs.

In contrast, Iberian pigs usually roam freely in the dehesas, eating acorns, selected feeds, or even fruit.

These differences determine the quality of the hams we consume.

Iberian ham is recognized for a more authentic flavor in its meat and fat. The genetics and feeding of Iberian pigs result in a high level of oleic acid, or monounsaturated fats, in the meat. This is due to the metabolism of acorns—rich in monounsaturated fatty acids—and free-range rearing in the dehesas. All these conditions give Pata Negra ham many more aromas and flavors characteristic of Iberian-breed pigs.

You’ve likely heard many comments and read articles about Iberian ham—its purity, diet, slicing, marbling, curing time, and the new regulation R.D. 4/2014.

The issue is more complex than we’d all like. To give you an idea, a quality standard for Iberian ham was approved in 2001. Since then, modifications and new orders were issued until in 2007 a new quality standard was published. However, there were still those who sought to confuse consumers by using symbols and names similar to Serrano hams.

This regulation allows consumers to differentiate each type of Iberian ham and buy with complete peace of mind.

What should we look for when choosing a good ham?

All producers offering their Iberian products on ibericomio.es comply with the quality standard. You may find news about resources submitted to the regulation or parliamentary initiatives to improve certain aspects. Ultimately, it’s not simple, as we’re dealing with something deeply rooted in our culture and economy.

Regardless of regulations, industry experts agree that the main factors determining the quality when buying Iberian ham are:

Breed. This refers to the animal’s racial purity. You can buy ham with Iberian purity ranging from 50% to 100%, regardless of diet or rearing. Racial purity is determined by the parents— the mother must always be 100% Iberian. If the father is 100% Duroc, 50% Iberian, or 100% Iberian, the offspring will be 50%, 75%, or 100% Iberian respectively. Breed influences the meat’s texture and color.

Feeding. Animals metabolize their diet, and the quality of their feed determines the quality of the ham. Iberian hams may come from pigs fed exclusively on feed, from a mix of feed and natural Dehesa resources, or pigs fed exclusively on acorns during the montanera before slaughter. The richness in monounsaturated fatty acids reflects in the ham’s silkiness and fat liquefaction.

Farming conditions. Animals can be raised intensively or extensively— in confined farms or free-range in the Dehesa. Intensive systems restrict movement, while extensive systems allow freer movement; terrain also affects their development.

Curing process. Iberian ham must age for at least 24 months. Larger hams require longer curing. There’s a difference between curing in natural environments versus modern warehouses with controlled humidity and temperature, which yield more consistent products year-round.
