It comes from Iberian pigs protected under the D.O. Guijuelo raised in freedom and fed exclusively on acorns and herbs from the Dehesa. The pigs that give rise to Martín Matas de bellota ham feed on holm oak bellota in their Montanera stage in which they manage to fatten more than 40kgs based on this fruit alone.

The history of Martín Matas was born in the early twentieth century when Justo Martín and Cecilio Matas in Guijuelo and Ledrada respectively began their journey in the Iberian pig sector.

100% Iberian breeding mothers are the result of careful genetic selection after many years of experience.
