leur notori\u00e9t\u00e9 et leur renomm\u00e9e au soin apport\u00e9 \u00e0 l&rsquo;\u00e9laboration de ces jambons et \u00e9paules.\nC&rsquo;est pourquoi nous allons vous parler aujourd&rsquo;hui d&rsquo;une appellation d&rsquo;origine prot\u00e9g\u00e9e qui couvre pas moins de 60 % de la production de jambon ib\u00e9rique dans notre pays : le fameux <strong>jambon de Guijuelo<\/strong>. <\/p>\n\n<p class=\"wp-block-paragraph\">Nous l&rsquo;avons d\u00e9j\u00e0 dit en parlant du <a href=\"https:\/\/www.ibericomio.es\/blog\/fr\/le-jambon-de-jabugo-tout-savoir-sur-cette-aop\/\">jambon de Jabugo<\/a>: investir dans un <strong>jambon AOP<\/strong>, c&rsquo;est investir dans un bon jambon.\nGr\u00e2ce aux contr\u00f4les de qualit\u00e9 rigoureux des appellations d&rsquo;origine prot\u00e9g\u00e9es, les jambons et les \u00e9paules qui b\u00e9n\u00e9ficient d&rsquo;une AOP sont synonymes de saveur et de tradition. <\/p>\n\n<h2 class=\"wp-block-heading\">Jambon de Guijuelo : un processus complet<\/h2>\n\n<p class=\"wp-block-paragraph\">Qu&rsquo;il soit <strong>d\u00e9soss\u00e9, tranch\u00e9 ou fra\u00eechement coup\u00e9<\/strong>, le <strong>jambon de Guijuelo,<\/strong> avant d&rsquo;\u00eatre d\u00e9gust\u00e9, doit suivre une s\u00e9rie d&rsquo;\u00e9tapes qui aboutissent \u00e0 la certification de l&rsquo;<strong>AOP Guijuelo.<\/strong><\/p>\n\n<h3 class=\"wp-block-heading\">\u00c9levage d&rsquo;un porc ib\u00e9rique de Guijuelo<\/h3>\n\n<p class=\"wp-block-paragraph\">Jusqu&rsquo;\u00e0 ce qu&rsquo;il arrive \u00e0 notre palais, le <strong><a href=\"https:\/\/ibericomio.es\/jamon-de-guijuelo-28\">jambon de Guijuelo<\/a><\/strong> suit un long processus.\nLe d\u00e9but de ce processus est plus pr\u00e9coce que ce que l&rsquo;on pourrait imaginer au premier abord.\nLes porcs sont apparent\u00e9s entre eux, ce qui est d\u00e9terminant pour la puret\u00e9 de la race.\nL&rsquo;<strong>AOP Guijuelo<\/strong> ne commercialise que des \u00e9paules et des jambons contenant au minimum <strong>75 % de race ib\u00e9rique<\/strong>.   <\/p>\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-block-paragraph\">Les porcs destin\u00e9s aux s\u00e9choirs de Guijuelo sont \u00e9lev\u00e9s \u00e0 l&rsquo;\u00e9tat sauvage dans les p\u00e2turages de toute l&rsquo;Espagne.\nQu&rsquo;ils soient nourris de <strong>cebo de campo<\/strong> ou de bellota, les porcs sont soumis \u00e0 un exercice quotidien.\nLeur alimentation soign\u00e9e permet d&rsquo;obtenir une r\u00e9partition tr\u00e8s \u00e9quilibr\u00e9e de la graisse, qui est tr\u00e8s bien r\u00e9partie en petites stries sur toute la viande.  <\/p>\n\n<h3 class=\"wp-block-heading\">S\u00e9chage du jambon ib\u00e9rique Guijuelo<\/h3>\n\n<p class=\"wp-block-paragraph\">Guijuelo est n\u00e9cessairement <strong>Salamanque<\/strong>.\nLe climat de Salamanque, \u00e0 l&rsquo;int\u00e9rieur des terres et en altitude, se caract\u00e9rise par des hivers longs, froids et secs.\nCe climat froid permet de ne pas saler le jambon autant que dans d&rsquo;autres r\u00e9gions pour l&rsquo;affinage.\nEn outre, gr\u00e2ce aux \u00e9t\u00e9s chauds typiques du plateau, la graisse est tr\u00e8s bien r\u00e9partie, ce qui donne lieu \u00e0 un marbrage tr\u00e8s homog\u00e8ne de la viande.   <\/p>\n\n<p class=\"wp-block-paragraph\">Le r\u00e9sultat ?\nUn jambon plus doux que les autres, au go\u00fbt authentiquement ib\u00e9rique.\nLe s\u00e9chage et la maturation sont des processus lents et artisanaux, qui peuvent durer plus de 800 jours pour les <strong>jambons Guijuelo Gran Selecci\u00f3n.<\/strong>   <\/p>\n\n<h2 class=\"wp-block-heading\">Trois cat\u00e9gories de qualit\u00e9 sup\u00e9rieure<\/h2>\n\n<p class=\"wp-block-paragraph\">Comme pour les autres AOP, c&rsquo;est le produit final qui est le plus important.\nGr\u00e2ce au climat local, \u00e0 la patience et au savoir-faire des producteurs de Guijuelo, chaque jambon et chaque \u00e9paule portant ce label est un d\u00e9lice pour le palais. <\/p>\n\n<h3 class=\"wp-block-heading\">Guijuelo Classe III Ham<\/h3>\n\n<p class=\"wp-block-paragraph\">Les jambons de <strong>bride verts<\/strong> sont les jambons de Guijuelo qui sont nourris avec du \u00ab\u00a0cebo de campo\u00a0\u00bb.\nCependant, comme nous l&rsquo;avons d\u00e9j\u00e0 mentionn\u00e9, l&rsquo;AOP Guijuelo ne travaille qu&rsquo;avec des animaux dont le pourcentage de race ib\u00e9rique est d&rsquo;au moins 75 %.\nCela signifie qu&rsquo;il s&rsquo;agit d&rsquo;animaux d&rsquo;une grande puret\u00e9, \u00e9lev\u00e9s dans les champs, en libert\u00e9, bien qu&rsquo;ils ne soient pas nourris de glands.\nUn Guijuelo D.O. avec sa bride verte a \u00e9t\u00e9 engraiss\u00e9 pendant au moins 60 jours.\nPendant cette p\u00e9riode, l&rsquo;animal est nourri avec des aliments de premi\u00e8re qualit\u00e9, toujours dans des conditions qui lui permettent de se d\u00e9placer et de profiter au maximum de l&rsquo;herbe nutritive.    <\/p>\n\n<h3 class=\"wp-block-heading\">Guijuelo Ham Classe II<\/h3>\n\n<p class=\"wp-block-paragraph\">Les <strong>jambons et \u00e9paules de Guijuelo<\/strong> de cat\u00e9gorie II sont \u00e9galement de race ib\u00e9rique \u00e0 75 %, mais la diff\u00e9rence avec les pr\u00e9c\u00e9dents r\u00e9side dans l&rsquo;alimentation.\nLes jambons et \u00e9paules de la classe II sont nourris aux glands, ce qui leur conf\u00e8re l&rsquo;<strong>\u00e9tiquette rouge<\/strong> caract\u00e9ristique.\nGr\u00e2ce \u00e0 cette alimentation, les jambons et <a href=\"https:\/\/ibericomio.es\/paleta-iberica-de-bellota\/833-1705-paleta-bellota-iberica-dop-guijuelo-martinmatas.html#\/46-peso-45_5kg\">\u00e9paules de Guijuelo<\/a> de la cat\u00e9gorie II, tout comme ceux de la cat\u00e9gorie I, sont riches en acide ol\u00e9ique, un \u00e9l\u00e9ment b\u00e9n\u00e9fique pour le contr\u00f4le du cholest\u00e9rol.  <\/p>\n\n<h3 class=\"wp-block-heading\">Guijuelo Ham Classe I<\/h3>\n\n<p class=\"wp-block-paragraph\">Chacune des trois cat\u00e9gories de <strong>jambon de Guijuelo<\/strong> en vaut la peine, mais si vous recherchez un jambon de luxe, la cat\u00e9gorie I est faite pour vous.\n\u00c9quivalent d&rsquo;une \u00e9tiquette noire, le <strong> <a href=\"https:\/\/ibericomio.es\/paleta-iberica-de-bellota\/682-paletilla-bellota-iberica-dop-guijuelo.html\">jambon<\/a> de <a href=\"https:\/\/ibericomio.es\/paleta-iberica-de-bellota\/682-paletilla-bellota-iberica-dop-guijuelo.html\">Guijuelo de<\/a> classe I ou <a href=\"https:\/\/ibericomio.es\/paleta-iberica-de-bellota\/682-paletilla-bellota-iberica-dop-guijuelo.html\">jambon d&rsquo;\u00e9paule<\/a><\/strong> est <strong>100 % ib\u00e9rique et nourri aux glands.<\/strong>  <\/p>\n\n<p class=\"wp-block-paragraph\">Les techniciens de l&rsquo;\u00e9levage de l&rsquo;appellation d&rsquo;origine sont charg\u00e9s de veiller \u00e0 ce que les porcs ne soient nourris qu&rsquo;avec des glands pendant la saison de la montanera.\nPour ce faire, ils visitent l&rsquo;exploitation \u00e0 plusieurs reprises au cours de cette p\u00e9riode et en attestent, tout en veillant \u00e0 ce que les glands soient abondants.   <\/p>\n\n<p class=\"wp-block-paragraph\">Le <strong>jambon de Guijuelo de classe I et le jambon d&rsquo;\u00e9paule de Guijuelo de classe
