Similaire mais pas identique.  <\/p>\n<h2>Diff\u00e9rences entre le Morc\u00f3n et le Chorizo Ib\u00e9rico<\/h2>\n<p>  La principale diff\u00e9rence entre le morc\u00f3n ib\u00e9rique et le chorizo r\u00e9side dans le boyau dans lequel le m\u00e9lange est emboss\u00e9. Le morc\u00f3n utilise toujours le \u00ab\u00a0ciego\u00a0\u00bb, c&rsquo;est-\u00e0-dire l&rsquo;estomac du porc pour la farce, tandis que le chorizo utilise toujours le gros intestin (chorizo cular) ou l&rsquo;intestin gr\u00eale (chorizo vela).  <\/p>\n<h3>Morc\u00f3n ib\u00e9rique<\/h3>\n<p>  En outre, pour le morc\u00f3n, la viande maigre est g\u00e9n\u00e9ralement moins hach\u00e9e afin que la viande qui compose le saucisson soit beaucoup plus visible lorsqu&rsquo;elle est coup\u00e9e. C&rsquo;est pourquoi vous ne trouverez pas beaucoup de morc\u00f3n dans les saucisses plus \u00ab\u00a0industrielles\u00a0\u00bb ou les marques plus \u00ab\u00a0g\u00e9n\u00e9ralistes\u00a0\u00bb. Dans ce morceau, le bacon et la graisse ajout\u00e9e sont beaucoup plus difficiles \u00e0 dissimuler que dans un morceau tr\u00e8s finement hach\u00e9. Certains producteurs utilisent des morceaux de viande tr\u00e8s nobles, tels que l&rsquo;aloyau, la pluma, la presa, pour donner une meilleure pr\u00e9sence visuelle \u00e0 la pi\u00e8ce et donc une meilleure qualit\u00e9 \u00e0 leur morc\u00f3n. Les viandes utilis\u00e9es proviennent de diff\u00e9rentes r\u00e9gions du pays et n&rsquo;ont pas toutes la m\u00eame valeur.  <\/p>\n<h2>Morcillas Patateras Ib\u00e9ricas et autres boudins ib\u00e9riques.<\/h2>\n<p>  Le boudin noir de pommes de terre ib\u00e9rique est g\u00e9n\u00e9ralement compos\u00e9 de bajoue de porc ib\u00e9rique, de pommes de terre et de paprika, de pr\u00e9f\u00e9rence du Piment\u00f3n de la Vera DOP, d&rsquo;ail et de sel. La Morcilla patatera est une saucisse tr\u00e8s typique de l&rsquo;Estr\u00e9madure. Il existe \u00e9galement une vari\u00e9t\u00e9 de Morcilla Calabacera dans laquelle la pomme de terre est remplac\u00e9e par du potiron. Les deux sont des mets d\u00e9licats qui m\u00e9ritent d&rsquo;\u00eatre d\u00e9gust\u00e9s. C&rsquo;est la bajoue qui donne \u00e0 la morcilla patatera son aspect trapu. Le boudin ib\u00e9rique est pr\u00e9par\u00e9, comme son nom l&rsquo;indique, avec du sang. M\u00e9langer le sang avec la bajoue ib\u00e9rique.
