Il am\u00e9liore notre sant\u00e9, r\u00e9duit le risque de certaines maladies et remplit des fonctions tr\u00e8s sp\u00e9cifiques que d&rsquo;autres aliments ne peuvent pas remplir.<\/p>\n\n<p class=\"wp-block-paragraph\">L&rsquo;apport nutritionnel le plus connu du jambon est celui des prot\u00e9ines. Ces derniers sont transform\u00e9s en acides amin\u00e9s. En particulier dans les 8 acides amin\u00e9s essentiels sans lesquels le corps humain ne peut pas fonctionner.<\/p>\n\n<p class=\"wp-block-paragraph\">Le jambon apporte \u00e9galement des vitamines (E, B1, B1, B2 et B12), du fer, du magn\u00e9sium, du zinc, de l&rsquo;acide folique, du sodium et du potassium.<\/p>\n\n<p class=\"wp-block-paragraph\">La relation directe entre les peptides bioactifs pr\u00e9sents dans le jambon et form\u00e9s \u00e0 partir des acides amin\u00e9s essentiels contenus dans le jambon est actuellement \u00e0 l&rsquo;\u00e9tude.<\/p>\n\n<p class=\"wp-block-paragraph\">Ces peptides bioactifs ont des propri\u00e9t\u00e9s b\u00e9n\u00e9fiques sur le syst\u00e8me cardiovasculaire, le syst\u00e8me immunitaire et le syst\u00e8me nerveux.  <\/p>\n\n<p class=\"wp-block-paragraph\">Amanda J. Kiliaan, du centre m\u00e9dical de l&rsquo;universit\u00e9 Radboud, aux Pays-Bas, a d\u00e9clar\u00e9 en 2015 que \u00ab\u00a0le poisson gras, la betterave ou le jambon ib\u00e9rique sont des sources de toutes sortes de substances qui contribuent \u00e0 am\u00e9liorer les connexions neuronales\u00a0\u00bb et pourraient donc contribuer \u00e0 pr\u00e9venir la maladie d&rsquo;Alzheimer.<\/p>\n\n<p class=\"wp-block-paragraph\">Une \u00e9tude de Seguimiento Universidad de Navarra (SUN), publi\u00e9e en 2019, a conclu que la consommation de jambon cru ne pouvait pas \u00eatre associ\u00e9e \u00e0 un risque d&rsquo;hypertension significativement plus \u00e9lev\u00e9 ou plus faible dans une cohorte prospective de dipl\u00f4m\u00e9s universitaires espagnols. Vous pouvez consulter les <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S002577531930630X\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">d\u00e9tails de l&rsquo;\u00e9tude<\/a><\/p>\n\n<p class=\"wp-block-paragraph\">En outre, en 2017, le Dr Sab\u00e1n, alors chef de l&rsquo;unit\u00e9 de m\u00e9decine endoth\u00e9liale et cardiom\u00e9tabolique de l&rsquo;h\u00f4pital Ram\u00f3n y Cajal de Madrid, a d\u00e9clar\u00e9 qu&rsquo;un r\u00e9gime \u00e0 base de jambon ib\u00e9rique pourrait \u00eatre b\u00e9n\u00e9fique pour un groupe tr\u00e8s large de la population : diab\u00e9tiques, fumeurs ou patients hypertendus. Selon leurs analyses et \u00e9tudes, la consommation de jambon ib\u00e9rique am\u00e9liore l&rsquo;endoth\u00e9lium, la couche de cellules qui tapisse l&rsquo;int\u00e9rieur des vaisseaux sanguins, et est donc responsable du bien-\u00eatre des art\u00e8res. Ses <a href=\"https:\/\/www.redaccionmedica.com\/secciones\/cardiologia\/comer-jamon-iberico-mejora-la-salud-cardiovascular-3829\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">travaux<\/a> ont \u00e9t\u00e9 publi\u00e9s dans la revue redacci\u00f3n m\u00e9dica.<\/p>\n\n<p class=\"wp-block-paragraph\">Mais il n&rsquo;y a pas que les tranches de jambon qui sont bonnes et d\u00e9licieuses.<\/p>\n\n<p class=\"wp-block-paragraph\">Il s&rsquo;av\u00e8re que le bouillon que vous pouvez pr\u00e9parer avec les os de jambon est \u00e9galement tr\u00e8s sain et il existe une explication scientifique que nous partageons avec vous.<\/p>\n\n<p class=\"wp-block-paragraph\">Selon l&rsquo;\u00e9tude <em>\u00ab\u00a0Peptides with Potential Cardioprotective Effects Derived from Dry-Cured Ham By-products\u00a0\u00bb <\/em>publi\u00e9e en 2019 dans le <strong>\u00ab\u00a0Journal of Agricultural and Food Chemistry\u00a0\u00bb,<\/strong> les peptides lib\u00e9r\u00e9s lors du processus de digestion du bouillon de jambon pourraient avoir des propri\u00e9t\u00e9s tr\u00e8s b\u00e9n\u00e9fiques pour notre sant\u00e9. Ces courtes s\u00e9quences d&rsquo;acides amin\u00e9s ont des fonctions antihypertensives, antioxydantes, antidiab\u00e9tiques et antithrombotiques, entre autres.<\/p>\n\n<p class=\"wp-block-paragraph\">Apr\u00e8s diff\u00e9rents tests in vitro, la recherche conclut que les os de jambon devraient avoir un impact positif sur la sant\u00e9 cardiovasculaire et une r\u00e9duction possible de l&rsquo;hypertension art\u00e9rielle chez les consommateurs.<\/p>\n\n<p class=\"wp-block-paragraph\">Le r\u00e9gime m\u00e9diterran\u00e9en inclut depuis des si\u00e8cles les bouillons de jambon dans ses menus. On nous a toujours dit \u00e0 quel point un caldito de jam\u00f3n ou un caldito de puchero \u00e9tait r\u00e9confortant.
