Nous verrons qu&rsquo;il est la cl\u00e9 pour donner au jambon ib\u00e9rique une saveur, un ar\u00f4me et une texture uniques.<\/p>\n\n<p class=\"wp-block-paragraph\">Dans le pass\u00e9, l&rsquo;Universit\u00e9 de Cordoue (UCO) a r\u00e9alis\u00e9 toutes sortes d&rsquo;\u00e9tudes sur le porc ib\u00e9rique et le jambon ib\u00e9rique. Aujourd&rsquo;hui, nous utilisons l&rsquo;une de ces \u00e9tudes pour en savoir plus sur le r\u00e9gime alimentaire des porcs nourris \u00e0 100 % de glands ib\u00e9riques.<\/p>\n\n<p class=\"wp-block-paragraph\">Selon une \u00e9tude r\u00e9alis\u00e9e il y a quelques ann\u00e9es. Le porc ib\u00e9rique pur mangeait quotidiennement entre 8 et 12 kg de glands et environ 5 kg d&rsquo;herbe.<\/p>\n\n<p class=\"wp-block-paragraph\">Selon la norme ib\u00e9rique, un porc ib\u00e9rique doit s\u00e9journer dans la \u00ab\u00a0montanera\u00a0\u00bb pendant au moins 60 jours. Par cons\u00e9quent, un porc 100% ib\u00e9rique aura consomm\u00e9 au moins 600 kg de glands et 300 kg d&rsquo;herbe avant l&rsquo;abattage.<\/p>\n\n<p class=\"wp-block-paragraph\">Il y aura toujours des porcs ib\u00e9riques qui mangeront plus que d&rsquo;autres. Dans leurs \u00e9tudes, ils ont montr\u00e9 que les porcs, comme les humains, ceux qui mangent plus en une journ\u00e9e ont tendance \u00e0 manger plus tout le temps. Il a \u00e9galement \u00e9t\u00e9 observ\u00e9 que certains porcs mangeaient plus d&rsquo;herbe que d&rsquo;autres. Au final, les plus gros mangeurs sont ceux qui prennent le plus de poids le plus rapidement. Ces porcs qui ne cessent de manger seront ceux qui atteindront les premiers le poids minimum d&rsquo;abattage de 108 kg.<\/p>\n\n<p class=\"wp-block-paragraph\">Lorsque les chercheurs de l&rsquo;UCO ont effectu\u00e9 des analyses d&rsquo;acides gras sur les carcasses de chaque animal, les r\u00e9sultats en indice d&rsquo;acide ol\u00e9ique ont logiquement vari\u00e9. Ils \u00e9taient directement li\u00e9s \u00e0 la consommation plus ou moins importante de glands et d&rsquo;herbes.
