labeling<\/a><\/li><\/ul><\/nav><\/div>\n\n\n<p class=\"wp-block-paragraph\">Current regulations demand a series of requirements to producers to certify that a food is organic.\nThis is due to a European Community regulation that is important because it prevents, in colloquial terms, that they give you a pig in a poke.   <\/p>\n\n<p class=\"wp-block-paragraph\">We began this article talking about the fact that it may seem that <strong>country or acorn-fed ham<\/strong>, because it is not from intensive livestock farming, is organic.\nDue to regulations, in reality it only obtains this label if certain conditions are met. <\/p>\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"The_environment_pastures_and_organic_farms\"><\/span>The environment: pastures and organic farms<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n<p class=\"wp-block-paragraph\">First of all, there is the environment in which the animals have been raised.\nThe <strong>organic<\/strong> pastures and <strong>farms<\/strong> are always independent from the traditional ones, they are certified and controlled.\nTo obtain the European Union organic farm certificate, no pesticides or chemicals must have been used in the last two years to treat the area.    <\/p>\n\n<p class=\"wp-block-paragraph\">No chemicals or elements harmful to the environment in the animals&#8217; breeding areas.<\/p>\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Breeding_and_fattening\"><\/span>Breeding and fattening<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n<p class=\"wp-block-paragraph\">Turning to the animals, first of all, animal welfare is guaranteed.\nBy law, the Iberian pigs have more land per head in these <strong>organic pastures<\/strong>.\nThe breeding of <strong>duroc<\/strong> pigs (the traditional white pig), destined to give us delicious organic sausages and hams. <strong><a href=\"https:\/\/ibericomio.es\/26_embutidos-y-jamones-ecologicos-luis-gil\">organic sausages and hams, also differs<\/a><\/strong> also differs from traditional livestock farming.  <\/p>\n\n<p class=\"wp-block-paragraph\">Within our range of <strong>organic products<\/strong>, you can find hams and sausages both Iberian and Duroc.\nIn both cases, the animals will have been raised in freedom and in the open air, enjoying the natural resources offered by nature, with its leaves, acorns and various foods from the countryside. <\/p>\n\n<p class=\"wp-block-paragraph\">Finally, all their feed must be of certified organic origin.\nIf they are fattened or if they have needed additional feed during fattening, this feed must also have an <a href=\"https:\/\/ec.europa.eu\/info\/food-farming-fisheries\/farming\/organic-farming\/organic-logo_es\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">organic label<\/a>.   <\/p>\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Drying_and_curing\"><\/span>Drying and curing<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n<p class=\"wp-block-paragraph\">The last stage in the production of cured shoulder and ham is drying and curing.\nThe ham must be salted before it is cured in the drying sheds.\nUsually in the salting phase, other additives are added as <strong>preservatives to the Iberian<\/strong> or Serrano <strong>ham<\/strong> to accelerate the curing time.  <\/p>\n\n<p class=\"wp-block-paragraph\">In the case of <strong>organic ham<\/strong>, there should be no artificial additives other than sea salt.\nIn some cases natural additives are used to give more flavor, such as garlic or paprika.\nThese must also be of <strong>certified organic origin<\/strong>.\nThis is the only way to give the final product the seal that distinguishes it as organic.   <\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Organic_ham_and_its_labeling\"><\/span>Organic ham and its labeling<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p class=\"wp-block-paragraph\">The main mark to look for on an <strong>organic ham<\/strong> (or any other organic food) within the European Union is its label.<\/p>\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-block-paragraph\">This logo identifies all products produced within the EU that meet the requirements to be organic.\nIt is essential to look for this seal on any <strong>organic<\/strong> sausage, shoulder or <strong>ham<\/strong> that we are going to buy, whether it is Iberian, Duroc or mixed breed. <\/p>\n\n<p class=\"wp-block-paragraph\">As we have mentioned, this distinction is the guarantee of the product&#8217;s origin.\nOf course, all the products that <strong>ibericomio<\/strong> offers as organic carry the regulatory label certifying them as such. <\/p>\n\n<p
