We are talking about a term valid throughout the European Union that was introduced many years ago to protect and promote the consumption of unique and authentic products. Made following traditional methods of a specific geographical area from raw materials from this same geographical area.<\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">The importance of appellations of origin is that they have made it possible for unique products from regions, counties or unique municipalities of the different countries of the European Union to be known worldwide.<\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">A PDO product is a protected product, a product that undergoes strict controls in its elaboration process and with a recognized quality.<\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">In summary, we could list the following <strong>characteristics of a PDO product<\/strong>:<\/span><\/p>&#13;\n<h3><b>Protecci\u00f3n legal a nivel Europeo<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">Denominating any product with the terms protected by the PDO is prohibited and prosecuted.<\/span><\/p>&#13;\n<h3><b>Vinculaci\u00f3n a una zona geogr\u00e1fica determinada<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">The production of a PDO product is limited to the municipalities included in the PDO specifications.<\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">In fact, it is common for large multinational firms to establish factories in PDO municipalities in order to ensure that their products are covered by a PDO.\nA clear example is in the municipality of Jabugo and how the large Spanish pork industries are establishing drying sheds for Iberian hams in this municipality in Huelva.\nA first step to be able to label their products with this PDO.  <\/span><\/p>&#13;\n<h3><b>Caracter\u00edsticas de calidad y producci\u00f3n<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">All products protected under a PDO must meet certain requirements in their preparation, which will provide a minimum quality to the product under the PDO.<\/span><\/p>&#13;\n<h3><b>Etiquetado espec\u00edfico<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">Hams or cheeses with Protected Designation of Origin will have a special and differentiated label.  <\/span><\/p>&#13;\n<h3><b>Auditor\u00eda de producci\u00f3n exhaustiva<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">Producing under the conditions of a PDO implies a very strict control of the sourcing and production process with continuous audits.<\/span><\/p>&#13;\n<h2><b>What is the difference between AO and PDO?<\/b><\/h2>&#13;\n<p><span style=\"font-weight: 400;\">The answer is simple: NONE.\nDenominaci\u00f3n de Origen is a shortened way of referring to PDOs,   <\/span><\/p>&#13;\n<h2><b>How many PDOs are there for cured ham?<\/b><\/h2>&#13;\n<h3><b>DOP Jam\u00f3n de Jabugo<\/b><b>\u00a0<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">The PDO<a href=\"https:\/\/www.ibericomio.es\/jamon-de-jabugo-huelva\/\"><strong> Jabugo Ham<\/strong><\/a> was created in 1998 with the clear commitment to protect a term and an origin known in all corners of the world; Jabugo ham.\nThis term covers all Iberian hams produced following the strict rules established by the PDO Jabugo Ham Regulatory Council. <strong><a href=\"https:\/\/dopjabugo.es\/\">Regulating Council of the Jabugo Ham PDO<\/a> <\/strong>for the 27 production companies approved by this PDO. <\/span><\/p>&#13;\n<h3><b>DOP Jam\u00f3n de los Pedroches\u00a0<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">The <a href=\"https:\/\/www.jamondolospedroches.es\/\"><strong>Los Pedroches PDO<\/strong><\/a> is the youngest PDO for Iberian ham.\nIt was created in 2010 by a group of farmers and producers, including one of <strong><a href=\"https:\/\/www.ibericomio.es\/productores-ibericos\/agroiberica-de-pozoblanco-jamon-iberico-de-bellota.html\">ibericomio&#8217;<\/a><\/strong> s <strong><a href=\"https:\/\/www.ibericomio.es\/productores-ibericos\/agroiberica-de-pozoblanco-jamon-iberico-de-bellota.html\">associates<\/a>.<\/strong> The <strong><a href=\"https:\/\/www.ibericomio.es\/jamon-de-los-pedroches\/\">Los Pedroches Ham<\/a> <\/strong>is highly recognized among Iberian ham experts for its quality.\nA curiosity: Los Pedroches Valley boasts the largest continuous extension of Dehesa dehesa in the entire peninsula.\nIt has an uninterrupted surface of holm oaks and gall oaks of approximately 360,000 hectares.   <\/span><\/p>&#13;\n<h3><b>DOP Jam\u00f3n de Guijuelo<\/b><b>\u00a0<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">From the youngest DOP of Iberian ham, we move on to the oldest.\nThe <strong><a href=\"http:\/\/www.jamondoguijuelo.com\/\">Jam\u00f3n de Guijuelo PDO<\/a> <\/strong>was born in 1986.\nOne of <a href=\"https:\/\/www.ibericomio.es\/productores-ibericos\/jamones-ibericos-julian-del-aguila.html\"><strong>our producers<\/strong><\/a> participated in its foundation <a href=\"https:\/\/www.ibericomio.es\/productores-ibericos\/jamones-ibericos-julian-del-aguila.html\">.<\/a> And how could it be any other way, the <strong><a href=\"https:\/\/www.ibericomio.es\/jamon-de-guijuelo\/\">Guijuelo ham<\/a> <\/strong>has been present at Ibericomio since our beginnings.  <\/span><\/p>&#13;\n<h3><b>Jam\u00f3n Dehesa de Extremadura\u00a0<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\"><strong><a href=\"https:\/\/www.ibericomio.es\/jamon-dehesa-de-extremadura-dop\/\">Jam\u00f3n Dehesa de Extremadura<\/a><\/strong> is the PDO that covers an entire autonomous community and has a reputation for high standards in animal husbandry and subsequent processing.\nThe <strong><a href=\"https:\/\/dehesa-extremadura.com\/\">Dehesa de Extremadura PDO<\/a> <\/strong>has been promoting the consumption of authentic Iberian ham from Extremadura since 1990. <\/span><\/p>&#13;\n<h3><b>\u00a0Jam\u00f3n de Teruel\u00a0<\/b><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">We speak of Jam\u00f3n de Teruel to refer to hams under the PDO Jam\u00f3n de Teruel, which is the oldest PDO for cured ham in Spain.\nThe regulations of the<strong><a href=\"https:\/\/jamondeteruel.com\/es\/\"> CRDOP Jam\u00f3n de Teruel<\/a> <\/strong>was approved in October 1984.   <\/span><\/p>&#13;\n<h3><span style=\"color: #000000;\"><strong>\u00bfC\u00f3mo es un Jam\u00f3n de Teruel?<\/strong><\/span><\/h3>&#13;\n<p><span style=\"font-weight: 400;\">The current specifications for Teruel Ham and Shoulder establish that cured hams and shoulders will come exclusively from the Landrace (standard type), Large White or crossbreed of both (mother line), and Duroc (father line) breeds.\nIn any case, <span style=\"color: #000000;\"><strong>they must always be born, raised and slaughtered in the province of Teruel.<\/strong><\/span> <\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">Teruel ham is produced only in municipalities in the province of Teruel with an altitude above 800m.\nThe minimum curing period for ham is 60 weeks and 36 weeks for Teruel shoulder ham.   <\/span><span style=\"font-weight: 400;\">The weights of the Teruel hams will be at least 7 kgs and 4.5 kgs in the case of cured shoulders.\nAll the pieces carry an eight-pointed star marked with fire in addition to the corresponding label. <\/span><\/p>&#13;\n<p><span style=\"font-weight: 400;\">There are more than 30 dryers of Teruel Ham throughout the province and 15 production farms.\nOn our website you can buy<strong> <a href=\"https:\/\/www.ibericomio.es\/jamon-de-teruel\/jamon-denominacion-de-origen-teruel.html\">Teruel Ham<\/a> <\/strong>for it, we have selected a very artisan producer. <\/span><\/p>&#13;\n<h2><b>Cured hams protected by PDO  <\/b><\/h2>&#13;\n<p><span style=\"font-weight: 400;\">In Spain we have seen how we have 5 cured hams protected by PDO&#8217;s.\nBut the PDO&#8217;s as we have said apply to hams from Spain and other E.U. countries.\nHere are some examples of cured hams from all over Europe that comply with the PDO:  <\/span><\/p>&#13;\n<ul><li><b>Presunto Barrancos DOP<\/b><\/li>&#13;\n<li><b>Presunto de Alentejo DOP<\/b><\/li>&#13;\n<li><b>Jambon Noir de Bigorre A.O.P<\/b><\/li>&#13;\n<li><b>Jambon du kintoa A.O.P<\/b><\/li>&#13;\n<li><b>Jambon sec de Corse \u2013 Prisuttu<\/b><\/li>&#13;\n<li><b>Prosciutto di Parma<\/b><\/li>&#13;\n<li><b>Prosciutto di San Danielle<\/b><\/li>&#13;\n<li><b>Prosciutto di Modena<\/b><\/li>&#13;\n<li><b>Prosciutto Veneto-Berico Euganeo<\/b><\/li>&#13;\n<li><b>Prosciutto Carpegna<\/b><\/li>&#13;\n<li><b>Prosciutto di Cuneo<\/b><\/li>&#13;\n<li><b>Prosciutto
