{"id":2211,"date":"2024-07-18T15:22:49","date_gmt":"2024-07-18T13:22:49","guid":{"rendered":"https:\/\/www.blog.ibericomio.es\/what-is-recebo-iberico-ham\/"},"modified":"2024-07-18T15:22:49","modified_gmt":"2024-07-18T13:22:49","slug":"what-is-recebo-iberico-ham","status":"publish","type":"post","link":"https:\/\/www.ibericomio.es\/blog\/en\/what-is-recebo-iberico-ham\/","title":{"rendered":"What is Recebo Iberico ham?"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Iberian recebo ham is a <strong>designation of the 2007 Iberian ham quality standard<\/strong>.<br \/>\nThe current Iberian ham standard (RD 4\/2014) does not contemplate this commercial designation.<br \/>\nTherefore, today this way of naming Iberian ham is not legal.<br \/>\nIt is no longer in use.   <\/span><\/p>\n<p><span style=\"font-weight: 400;\">We explain a little about what Recebo Ham used to be called and why this designation no longer exists.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2003 aligncenter\" src=\"https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/jamon-de-recebo-300x200.jpg\" alt=\"recebo ham\" width=\"473\" height=\"315\" srcset=\"https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/jamon-de-recebo-300x200.jpg 300w, https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/jamon-de-recebo.jpg 585w\" sizes=\"auto, (max-width: 473px) 100vw, 473px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"font-weight: 400;\">Main characteristics of recebo ham<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">For the name Recebo, Article 5 of RD 1469\/2007 indicated that it could be used for <strong>those products from animals<\/strong> that, after increasing their weight to a certain extent in the open range, <strong>their feed could be supplemented by the addition of fodder.<\/strong> Of course, not everything was valid.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The average weight required was between 92 and 115 kilograms, with an entry date between October 1 and January 15 and slaughter between December 15 and May 15, with a minimum weight of 108 kg.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Therefore, to say that recebo ham was an acorn ham that was finished with feed is very vague and misleading.<br \/>\nPossibly, that is one of the reasons why at present this denomination does not exist in the 2014 Iberian quality standard. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Objectives of the Iberian ham quality standard: <\/span><span style=\"font-weight: 400;\">Royal Decree 4\/2104<\/span><span style=\"font-weight: 400;\">The current Iberian ham standard, Royal Decree 4\/2104, was created with several very clear objectives:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">To facilitate the knowledge of the Iberian product and its characteristics by consumers<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Improving the racial purity of Iberian pigs<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Establish clear labeling and designations for all Iberian products to avoid confusion for consumers.  <\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Establish control mechanisms for traceability and strict compliance with the standard.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">There will be detractors and defenders of the current quality standard for <a href=\"https:\/\/www.ibericomio.es\/jamon-iberico\/\" target=\"_blank\" rel=\"noopener\">Iberian ham<\/a>, but the fact is that <\/span><b>thanks to RD 4\/2014<\/b><span style=\"font-weight: 400;\">today, the guarantees and traceability control of Iberian products are total.<\/span><span style=\"font-weight: 400;\">The previous Iberian ham quality standard, the 2007 RD 1469\/2007 established four sales designations according to the type of feed:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Acorn-fed or finished in the mountains.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Recebo or finished in recebo.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Field bait<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Bait  <\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">  The current quality standard for Iberian pigs establishes commercial designations that take into account feed, racial purity and handling:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">100% Iberian acorn-fed acorn &#8211; black seal<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Acorn-fed acorn 50% or 75% Iberian &#8211; red seal<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">From free-range fattening (50%, 75% or 100% Iberian) &#8211; green seal<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Fattened (50%, 75% or 100% Iberian) &#8211; white seal<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-2011 aligncenter\" src=\"https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/que-es-jamon-de-recebo-300x200.jpg\" alt=\"what is recebo ham\" width=\"467\" height=\"311\" srcset=\"https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/que-es-jamon-de-recebo-300x200.jpg 300w, https:\/\/www.ibericomio.es\/blog\/wp-content\/uploads\/2024\/07\/que-es-jamon-de-recebo.jpg 585w\" sizes=\"auto, (max-width: 467px) 100vw, 467px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"font-weight: 400;\">Why is recebo ham outside the Iberian ham quality standard?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">In our humble opinion, we understand that recebo Iberian ham is eliminated from the current Iberian ham standard of January 2014, among other reasons, because <strong>it favored consumer confusion<\/strong> and, to a certain extent, fraud.<\/span><\/p>\n<h2><span style=\"font-weight: 400;\">Is it possible to buy Recebo Iberian Ham nowadays?<\/span><\/h2>\n<p><span style=\"font-weight: 400;\">The answer is simple and categorical: NO.<br \/>\nBecause that trade name no longer exists. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">If you are looking for something similar, we, with all the precautions in the world, could recommend you to buy a 100% Iberian Cebo Campo ham as the most similar, according to the current standard, to what was once a recebo Iberian ham.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">We insist, it is not possible to buy a recebo ham, we should not talk about recebo Iberian ham.<br \/>\nWhy are we talking about the 100% Iberian cebo campo ham? <\/span><\/p>\n<p><span style=\"font-weight: 400;\">A 100% Iberian animal, due to its quality, is always going to be fed with acorns and managed in the &#8220;montanera&#8221;.<br \/>\nIt does happen, because pigs are not machines, that a 100% Iberian pig that is in Montanera on March 31 has not fattened enough for slaughter.<br \/>\nAt that moment, <strong>it would lose the category of Bellota and would go to <a href=\"https:\/\/www.ibericomio.es\/jamon-iberico\/jamon-iberico-cebo-campo\/\" target=\"_blank\" rel=\"noopener\">Cebo Campo<\/a><\/strong>.<br \/>\nThat is why we say that we only dare to venture that it would resemble something similar to what used to be called Recebo ham, and always assuming that the animal had grazed in Montanera.   <\/span><\/p>\n<p><span style=\"font-weight: 400;\">In any case, today, if you want a ham from an animal that has eaten acorns, there is only one guarantee of having it: buying a ham with a <strong>red or black seal<\/strong>.<br \/>\nThe rest is pure conjecture, with no official traceability system to guarantee it. <\/span><\/p>\n<p>&nbsp;<\/p>\n\n","protected":false},"excerpt":{"rendered":"<p>Iberian recebo ham is a designation of the 2007 Iberian ham quality standard.
